Makes one tray - use whatever fruit/seeds/nuts you have at your disposal.
125g butter, cubed
75g dark brown sugar
2tbls honey
1tsp cinnamon
120g porridge oats
40g dessicated coconut
75g self-raising flour
65g dried cranberries
80g dried apricots, chopped
70g sunflower seeds
2tbls pumpkin seeds
Method
* Preheat the oven to 160 C. Oil a baking tray with sunflower oil. Line with enough parchment paper to hang over the sides.
* Mix all of the dry ingredients together in a big bowl.
* Melt the butter, sugar, honey and cinnamon and stir until the sugar dissolves.
* Mix this mixture quickly into the dry ingredients.
* Press mixture into the tray.
* Bake for 20 minutes until lightly golden. Lift out of the tray and allow to cool then cut into flapjacks.

My flapjack are something similar to Kathrine's and will make about 25
Ingredients
175g Butter 1 Tsp Golden syrup 175g Soft brown sugar 1 Tsp Peanut butter 350g Porridge oats 100g Salted peanuts 50g Sunflower seeds 1 tsp mixed peel
Method: 1) Melt butter in pan under low heat 2) Add brown sugar,golden syrup and peanut butter stir until sugar is dissolved 3) Add Nuts and peel and stir 4) Add porridge in 3 stages and stir it will look a little dry but is okay 5) Trans fare into a tray with parchment paper as with Kathrine's 6) Press mixture down into tray ues a bit of force(I use a potato masher,you don't want them falling apart in you pocket)it will rise a little in the oven 7) Place in a pre-heated oven at 150 for 40min 8) Allow to totally cool before cutting into squares (Just enough for 2 nice size bites)
I also rap my squares in parchment paper,it makes them a lot easier to open when on the bike and with winter gloves on
