Where triathlon starts with a pool swim rather than open water, is there a standard set of rules on how that occurs or does it vary with the organisation? For example, do people share lanes? If so, what is the correct way to overtake / be overtaken? Is there a resource somewhere that lists rules? Thanks, G

In a pool it will multiple people in a lane, on the day you should be able to find a lane with an estimated swim time in and around your own.
Generally if you are constantly on the feet of someone or feel someone on your feet trying to get passed you would be let past at the end of a length by waiting the 1 -2 seconds for you to pass. The exact rules etc should be discussed during hte race briefing on the day of the event but also some may be explained in a race booklet sent out during race week.
