2 ripe avocados 1 chilli (jalapeno,or preferred choice) 1 clove garlic 1 lime 6 cherry tomatoes halved.
Method. Scoop flesh from avocados and place in bowl. Crush chilli and garlic to paste and add little salt. Add lime juice to avocados with paste and mix with fork. Add tomatoes and place in fridge for 20 mins before eating.

Love the stuff. For fellow coriander and avocado lovers, this Jamie Oliver salad is different but excellent: Avocado, Spring Onion, Coriander and Chilli Salad with Toasted Almonds I'm finding that the avocados in the shops are rubbish at the moment. They were excellent up to a few weeks ago. I just bought them every weekend and they were ready to eat 5/6 days later.
