Question what would the bike heads recommend as reliable tyres ? I have at the moment gatorskins and the work well enough, big problem is when I actually get a puncture with these I need 20 min to replace the tube and there is a good chance that I pinch the replacement tube since it is so hard to get the tyre onto the wheel, so I'm looking for a fastish, reliable, easy to put on / of tyre

Conti Grand Prix 4000s ii are the gold standard in grip and performance. Tyre being tight on the rim is more about the rim than tyre.

Grand Prix all the way, the grip even in very wet conditions is fantastic. Changing them is only matter of practice

Conti also do a four season tyre - It's an evolution of the Gatorskin. It is better wearing then the 4000s, excellent grip, but not more rolling resistance (slower). Like the 4000s it comes with a hefty price tag of ~€50/tyre (similar price to the 4000s). Well worth shopping around as you'll always get a deal somewhere.

Britta I'd go with the four season tires great puncture protection.I agree with Chris it is more likely the rimms which are giving you a problem,if you make sure the tire on the opposite to where you are trying to bend over the rim is sitting in the middle of rim it will give you ans extra 2mm or so and help flipping the tyre on
