Great interview on RTE1 on Saturday morning with Derval O'Rourke. She's written a new book on food for runners, so lots of simple, fast and healthy options for athletes. Well worth listening to, or check out her blog.
Just reporting that I made the Oaty Breakfast Muffins from Derval's blog. The Chocolate Coconut ones were so good I made them twice. The Banana Pecan ones were less successful. They had a kind of weird consistency. 1/2 a banana might do rather than a whole one.
Apparently her cold Porridge is a real hit as well , a couple of people had it with them on Friday after the swim session and they absolutely loved it , will try it over the next couple of days myself . Recipe for it is on the Blog as well
